These coconut ‘scones’ are a delicious treat at any time and are perfect for Cream Tea Day. They are much lighter than a normal scone and have a fresh, uplifting feel to them that doesn’t give me that post wheat/sugar slump an hour later.

The nutty coconut is balanced by the zing of the lemon and the fresh berries are sweet enough that you don’t even notice this recipe has no added sugar!

120ml almond milk
40g coconut flour
Zest ½ lemon
Teaspoon coconut oil

To serve
Handful fresh berries, strawberries and raspberries are my favourites
Blob yogurt of your choice. I eat limited amounts of plain live cow’s milk yogurt but coconut yogurt is delicious too

Makes enough for 2 adults or one adult and 2 children.  It takes less than a minute to make the mixture and it works best in small batches, so I just make another bowlful if we want more.

Lightly whisk egg and milk together with a balloon hand whisk to combine. Add HALF of the coconut flour and the lemon zest and whisk until fully combined and smooth.

Add the rest of the coconut flour and continue whisking. It turns into a soft paste, so you may need to switch to a spoon.

It’s very important to add the coconut flour in two batches else it goes lumpy – yuk.

Heat the coconut oil in a frying pan until hot, then reduce the temperature to medium.

With slightly damp hands, take a golf ball sized piece of mixture, roll into a ball and flatten gently. The mixture is quite delicate so you need handle it fairly carefully when you put it in the pan.

Cook for 3-4 minutes before CAREFULLY lifting and turning over. It should be nicely browned on each side.

(A quick word about my photos. Yes I know they are rubbish but that’s my actual lunch treat I snapped, not a gussied up plate. And it was divine to eat.)
